CHEF JEFF: One Byte At A Time — Fried Red Cabbage With Mashed Potatoes And

Fried or braised cabbage is a popular dish in many parts of Europe, particularly in the countries of Germany, Poland and the Czech Republic. Often, it is served with meat and potatoes. I’ve always been a big fan of cooked cabbage, no matter if it’s just steamed and smothered with butter, as my old friend Marsha Gunderson prefers, in a …

JEFF TIEDEMAN: Straight From The Vest — Let’s Put A Stop To Racism And Other Forms Of Discrimination

Growing up in the small northwestern Minnesota town of Crookston, I didn’t have very much interaction with minorities. In sixth grade, the only year I attended public school, Angela Mendez was in my class.  I knew her older brother, Ruben, and a younger brother, Vincent. When I was in high school, one of my friends was Andy Villegas. Both the …

LA VALLEUR COMMUNICATES: Musings By Barbara La Valleur — My First Blog As An ‘InForumer’

“Write a bio to put up on the site,” Jeff Tiedeman texted. Geez, you want me to write who I am, a photojournalist of more than 50 years, in one paragraph? Sure. It wouldn’t be so bad if I didn’t immediately have the thought that it’s like writing my own obit. I’ve written a few hundred of those starting at …

CHEF JEFF: One Byte At A Time — Shredded Barbecue Beef

Why are sandwiches so popular? There are a lot of reasons. Perhaps the biggest one is the sheer number of ingredients that can be placed between two slices of bread or on a bun and be eaten anytime. In the morning, for example, a person can feast on a fried egg with bacon on two pieces of toast. Or one with tuna …

CHEF JEFF: One Byte At A Time — Swiss Steak

There was a time  — back in the 1950s and ’60s — when Sunday dinner was the most special meal of the week. It most often featured a nice roast or chicken, along with potatoes, a vegetable and always a tasty dessert. When I was a kid, we could always look forward to a wonderful meal on Sunday. They were a …

CHEF JEFF: One Byte At A Time — Sloppy Joes

It’s nice to have a go-to dish, one that you’ve fixed many, many times and probably could make in your sleep, especially if you’re hosting a family get-together or a party for a group of which you are a member. I have one. It’s sloppy Joes, or barbecues as we like to call them at our house. Actually, that’s what I’ve been calling …

TERRY DULLUM: The Dullum File — The Voice That Taught Us How To Listen

I listen to Frank Sinatra’s voice almost every day of my life, mostly in my car.  I don’t know what would happen to be if I didn’t. I’ve been a Sinatra fan since I was a teenager.  Like great classical music, I can listen to his music over and over again and hear something new in it almost every time. …

JUSTIN WELSH: Food Muse — Boeuf Bourguignon

Boeuf bourguignon is one of my favorite dishes in the world. This French stew was the first recipe (pilot) on the cooking show, “The French Chef,” starring the great Julia Child. Julia was incredibly informative as she explained the procedures of each recipe. The show, which was partly done in black and white, didn’t bring justice to the beautiful color …

TERRY DULLUM: The Dullum File — ‘Zombie Empire’

Remember  the Sony Pictures hacking scandal a few weeks back? Hackers released a ton of confidential data belonging to Sony Pictures Entertainment, including personal information about Sony employees, their salaries and whatnot.  It provided a glimpse of who was doing what to whom in Hollywood.   It embarrassed countless show business talent and executive-types and provided a lot of fun …

NANCY EDMONDS HANSON: Reforumed — ‘Forever Young’? Not So Much

Rock concerts, once my reason for living, seldom tempt me anymore. But when one comes along that features the entire soundtrack of your life, there’s no excuse not to show up and marinate in music. And when the headliner is also featured on this month’s edition of the grown-up version of Tiger Beat — AARP Magazine — well, the lure …

JEFF TIEDEMAN: Straight From The Vest — Bring On The Baseball

Have you ever had the lyrics of a song rolling around inside your head that you just can’t get rid of, no matter what you do? I think just about everyone of us has experienced that. I remember years ago, a co-worker of mine, Andy Braford, used to get absolutely flustered when another colleague of ours would sing or recite the lines …

CHEF JEFF: One Byte At A Time — Fowled-Up Stroganoff

Anyone who hunts and also is handy around the kitchen knows that most of the game that can be taken in the field is interchangeable recipe-wise with meat that is raised domestically. And those who are familiar with me aren’t too surprised by the number of entrees I’ve prepared over the years that feature wild game. The total probably vastly exceeds any of those that makes use …

LINKS TO NEWS YOU MIGHT FIND INTERESTING — PolyMet Pollutes Minnesota Boys Hockey Tournament

The Minnesota State Boys High School Hockey Tournament kicks off today with East Grand Forks Senior High featured in the first game. That’s the good news for northern Minnesota viewers. The bad news is the tournament is sponsored by PolyMet Mining Corp., and JT Haines of the Newspeak Review online site says that’s wrong. Newspeak is asking viewers and fans …

CHEF JEFF: One Byte At A Time — Milt’s Meatloaf With A Twist

Sometimes, it’s difficult to find recipes that are easy and tasty as well as economical. But there’s one that is probably familiar to a lot of people who grew up in the 1950s and ’60s — meatloaf. I don’t know too many people who don’t have fond memories of their mom’s meatloaf. And if you’re like me, you can add the meatloaf …

TIM MADIGAN: Anything Mentionable — Brothers Barely Remembered, And The Horrible Realities Of War

I’ve known Harley Stahlecker and his wife, Peggy, pretty much my whole life. Harley was a legendary teacher, coach and referee in the little town where I grew up, Crookston, Minn. Peggy was the mother of the Stahlecker boys, who in the 1970s and ’80s were teammates of the Madigan boys in hockey and baseball. It was a happy time …

UND 3, ST. CLOUD STATE 1, Men’s Hockey, February 28, 2015

UND (15-5-2 in the National Collegiate Hockey Conference and 24-6-3 overall) wore its black jerseys Saturday for only the third time in Ralph Engelstad Arena, and that was all the jump needed to go on to defeat St. Cloud State (10-11-1 in NCHC and 15-16-1 overall) 3-1 in front of a full house of more than 12,000 fans. UND clinched a share of …

CHEF JEFF: One Byte At A Time — Banana Bread

There aren’t too many people who like overripe bananas. But of those who do, most of them prefer to use theirs in banana bread. I’m probably one of the few who don’t mind eating a banana that’s turned brown. In fact, I kind of like the taste of an overripe banana. And I like banana bread just as much or even …

LINKS TO NEWS YOU MIGHT FIND INTERESTING — Spring Is Right Around The Corner

A slow climb into the 30s by week’s end Meteorologist Paul Huttner says people in the North only have one or two more corners to turn before temps rise and mosquitoes and ticks think about hatching, assuming moisture conditions will allow that to happen. I’m still concerned about the potential for growing drought this spring if the usually reliable spring …

TERRY DULLUM: The Dullum File — The Guys And Me

Another full house and a standing ovation for the final performance of Guys on Ice last night at the Fire Hall Theatre in Grand Forks, N.D. It was a great finish to a very fun run. In eleven performances and a half dozen or so rehearsals, I didn’t fall off the stage once. To me that’s success. Thanks to everyone …

CHEF JEFF: One Byte At A Time — Spaghetti With Meat Sauce

A good meat sauce goes a long ways when it comes to pasta. Ask just about any kid, and they’ll tell you so. I can attest to that. One of my favorite meals as a youngster was a meat sauce that we used to have over pasta for school hot lunch. My Auntie Helen Tiedeman, who was the head cook, always made …

JIM FUGLIE: View From The Prairie — So Long, Bighorn Sheep

I learned about this earlier in the week, but today it became official, when my copy of North Dakota Outdoors arrived in the mail: Add bighorn sheep to the list of species for which there will be no hunting season in North Dakota this year. Or for the foreseeable future. At least not likely in my lifetime. The Game and …

TERRY DULLUM: The Dullum File — Interviewing The President

For what it’s worth, Kerstin Kealy’s interview with President Obama today is not exactly a first for the station. Former WDAY-TV anchor Marv Bossart was one of several local television reporters to conduct a sit-down interview with President Reagan at the White House about a year before his presidency ended in 1989. Marv recalled later to many of us that …

JOE GREENWOOD: 20,000 Leagues Into The Sky — A Drive Through Pembina Gorge

A wintry February drive through the Pembina Gorge in northeastern North Dakota entertains this midday respite, listening to French-Canadian radio via Manitoba airwaves. Le touriste, indeed! CHEF JEFF: One Byte At A Time — Rhubarb Crunch

Nothing makes me think of spring more than rhubarb. So, when I come across some of it in the freezer during the dead of winter, my heart soars. Actually, we’re less than a month away from the official first day of spring. And even though those of us who’ve lived in the Northland all of our lives know that we …

JIM FUGLIE: View From The Prairie — Another Black Eye For North Dakota

Here’s an update to a post I wrote last night regarding North Dakota Agriculture Commissioner Douglas Goehring. Thanks to Valerie Barbie-Bluemle for pointing this out to me this morning. You can read yesterday’s post by going here. The Environmental Protection Agency’s Office of the Inspector General released its report Monday that tells why it will resume federal inspections of pesticides in North …

JIM FUGLIE: View From The Prairie — Douglas Goehring And The EPA: The Real Story

North Dakota Agriculture Commissioner Douglas Goehring is all over the news media this week saying he was “blindsided” by the EPA. Looks to me like he was just blind. And pretty stupid, too, and now he’s going to cost the U.S. taxpayers a bunch of money, if the EPA has to send in a team of federal pesticide inspectors to …

TERRY DULLUM: The Dullum File — Earl

Ginny and I were terribly saddened to learn of the passing of Earl Williams today, one of WDAY Radio’s best and brightest.  Earl is probably best known as one-half of the Earl & Don Show on WDAY, Don being Don Dresser. Even as a snarky teenager, more into rock music rather than ‘DAY’s middle of the road format, Earl & Don …

KEVIN GRINDE: Rhythm Of The Trail — Dog And Master Learn To Live With Age

Kea snarled at her Master when he tried to get into bed last night. Yes, the dog was occupying His space, which sometimes is shared territory, until he needs to sleep, which is far less than the dog’s requirement these days. At least the spot her hairy body vacates is warm, a good thing when the temp is set at …

CHEF JEFF: One Byte At A Time — Sunday Shrimp Pasta Bake

You can never have too many fish or seafood recipes when Lent rolls around. After all, a person can eat only so much tuna casserole, fish sticks and salmon loaf. When I was growing up, there was no such thing as the Internet, so Mom couldn’t hop on a computer (a what?) and look for interesting meatless recipes to serve …
