CHEF JEFF: One Byte At A Time — Fried Cabbage With Onions and Sweet Peppers

Sausage can be paired with many other foods. Here’s one of my favorite skillet recipes that combines cabbage, onions and sweet bell peppers with some wonderful country style sausage from Stan’s Supermarket in Wishek, N.D.

My friend, Delore Zimmerman, who hails from Wishek, kindly picks up for me some of the country style sausage and ring bologna whenever he goes home. One in a while, I swap him some of my homemade sauerkraut for the a couple of rings of sausage or bologna.

And that’s another combo that tickles my palate!

Fried Cabbage with Onions and Sweet Peppers
1 tablespoon olive oil
1 sweet onion, chopped
1 green bell pepper, diced
1 red bell pepper, diced
14 ounces smoked sausage, cut diagonally
3 cloves garlic, minced
1 medium head cabbage, chopped
½ teaspoon sea salt
½ teaspoon ground black pepper
 teaspoon garlic powder
½ teaspoon red pepper flakes
Heat olive oil over medium heat in a large skillet and sauté onion until translucent. Add peppers and minced garlic and stir. Add smoked sausage and stir. Add cabbage, salt, ground black pepper, garlic powder and red pepper flakes. Stir, cover and simmer for 10 minutes, stirring occasionally. Serve.
