CHEF JEFF: One Byte At A Time — Baked Salmon with Honey Mustard Sauce

Those of you who are old enough to remember the mid-1960s TV show “The Addams Family ” —  or the 1991 movie by the same name — might recall one of Gomez’s favorite lines: “Oh, Tish, I love it when you speak French.”

The John Astin character (Raúl Juliá in the film) then proceeded to kiss the arm of Morticia — Carolyn Jones on TV, Angelica Huston in the movie — from her wrist to her shoulder in a show of affection.

I’m always reminded of that quote whenever grabbing a bottle of Dijon mustard out of the refrigerator or off the condiment shelf in the supermarket.

That thought came to mind earlier this week when I came across the following baked salmon recipe, which features a sauce that is a mixture of mayonnaise, honey and Dijon mustard.

It wasn’t enough to make me grab my wife’s arm, but the taste is surely one that is worthy of an exclamation such as Gomez’s.

Baked Salmon with Honey Mustard Sauce
7-ounce salmon fillets, skin-on
½ cup low-fat mayonnaise
¼ cup Dijon honey mustard
¼ cup honey
2 tablespoons finely chopped chives, plus additional for garnish
Kosher salt and freshly ground white pepper
Preheat the oven to 375 degrees. Spray a large baking sheet with Pam, and lay the salmon, skin side down, on top. Set aside.
Combine the mayonnaise, mustard, honey and chives in a medium bowl and stir to thoroughly combine. Reserve half of the sauce. Spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet. Sprinkle with salt and pepper.
Roast just until the fish is opaque in the center, about 7 minutes. Switch setting oven to broil. Broil the fish for 6 to 7 minutes, but avoid overcooking. Garnish with chives and serve with the reserved sauce.
